Apply Vacuum to the Torr Kitchen chamber, and gases are drawn from the contents’ tissues. Release Vacuum slowly, and ambient pressure drives the surrounding marinade, brine, or oil deep into the contents. Repeat Cycle a few times to create a pulsing action. Each pulse penetrates deeper than the last. Then, Rest allows the surrounding solution to do its job of flavoring, tenderizing, or collecting.
